Thanks for sharing your culinary adventure…can I recommend you to’Survivor”. It would be interesting what a chef would come up with…. Must be glorious in Maine right now. (Sigh!) In the Philippines, we would just cut open the sea urchin, drizzle some lemon at the beating, throbbing creature and slide it smoothly down our ‘gullets’!
