“Dim Sum” Cooking Class – January 9th & 10th

January 9th or January 10th, 2016 – 1-3pm

Start the new year off right – learn something new and enjoy delicious cuisine!  Dim is an umbrella category for small Chinese dishes. Typical examples of this food are small dumplings, wrapped foods such as won tons and egg rolls, and other foods. In general, individual portions of dim sum are small, so that numerous dishes can be ordered and sampled by the table. Most dim sum falls under the category of a savory pastry, although these foods can be prepared in a variety of ways. Dim sum can be steamed, fried, boiled, baked, or broiled, and this wide range of options makes for a lively and varied meal.

In our cooking class, we will prepare a variety of dim sum, starting with three fillings: Thai Pork, Turkey and Shiitake and Shrimp. Then we will make three varied dipping sauces: Thai-Lime, Garlic-Chili and finally a Ginger-Sesame Dipping Sauce. Then it’s time to wrap the filling into various shapes for steamed dumplings and fried dumplings. Next we will make potsticker dough and form and cook potstickers. The final recipe will be crisp Shrimp Toast.

Join Chef Michael is his Camden kitchen for an evening of cooking and dining!  Assist in creating the evening’s four course menu which will be complimented with a wine paring. The goal is to recreate locally the fun that is enjoyed on their Foodie Adventures abroad!

“Travel to Tuscany” Cooking Class – November 7th & 8th

November 7th or November 8th, 2015 – 1-3pm

Our first cooking class of the year, “Travel to Tuscany” is fast approaching!  If you can’t join Chef Michael in Italy for one of his Culinary Adventures, then come to Camden and experience some of his favorite Tuscan dishes. “Travel to Tuscany” will begin with Baked Artichokes with fresh Ricotta, Aged Pecorino and Italian Herbs.  Next will be Roasted Bell Pepper, Arugula and Grilled Eggplant Salad followed by Seafood Risotto with White Truffle Oil.  Class will finish up with dessert, Salted Caramel Budino – Italian Butterscotch Pudding.

“Mediterranean Cuisine” Cooking Class – June 13th & 14th

Join Chef Michael here at the Hartstone Inn, as he shares some of his favorite recipes from the Mediterranean region. Join Kate Shaffer of Black Dinah Chocolatiers as she guides you through the magic world of professional chocolate making.  Kate’s beautiful and delicious, handmade chocolate treats have been featured in both Gourmet and Martha Stewart Living magazines.  The two hour class will include:

  • A brief overview of how chocolate is made, from bean to bar
  • Tasting chocolate and figuring out what you like
  • What does it take to be a truffle?  Making ganache
  • Working with chocolate: Melting and tempering, enrobing, moulding, decorating
  • Storing chocolate
  • Sampling and enjoying chocolate

“Sushi 101” Cooking Class

Do you LOVE sushi and would like to learn how to make it at home?  “Sushi 101” will teach you all the basics including how to prepare rice and other ingredients needed to roll sushi.  Learn the proper methods for small to large rolls along with the correct knife techniques.  Whether you are a beginner or accomplished, you will learn centuries old ways for making Edo-style sushi with a modern twist.  It’s sure to impress your family and friends! 

Instructor Chris Wolf has been a sushi chef for 25 years. He has owned his own Japanese restaurants and mentored under three sushi masters in his career. Well versed in the art of sushi making, Wolf will show you the basics to build on.   A resident of Camden, Maine he has treated the mid-coast to tempting dishes for a long time.
