I am writing this post from Catalonia, Spain where we are winding down an amazing first week in our newest destination.  The weather has been 7 glorious days of sunny mid- 60’s to low 70’s.  After a long Maine winter it’s wonderful to see lush green fields in the valleys of the Pyrenees and to choose from an overwhelming assortment of fruits and vegetables that are oozing with flavor.

Chef Michael Salmon and I have been taking a foodie travel break from our home at the Hartstone Inn, Camden Maine and hosting Foodie Adventure tours in Tuscany and the Loire Valley for several years. We look forward to the trips as a chance to cook and play in a new environment, to soak in the inspiration for new ideas from the markets, the local producers and the scenic villages along the way.

Cooking Classes at Cellardoor Winery

Along with our friends at East End Cupcakes in Portland, we’re hosting a very special sweet treat of a cooking class just in time for Mother’s Day. Join us as we get our hands dirty (floury?) in the kitchen as East End’s queens of confections take us through the A to Z of baking cupcakes. You’ll get to relax, sip on wine, and, of course, dig into some seriously decadent treats.

This is certainly a twist on your traditional lobster cooking class! Join Chef Lani Stiles of Megunticook Market as she takes you through this crustacean-inspired class, from cooking and cracking lobster to preparing it in unique and inspiring ways. Enjoy a four-course dinner as you dine on the fruits of your labor and sip Cellardoor wines that have been paired with each dish. Seats for our cooking classes are limited, so early reservations are recommended.

You know what they say, if you can’t stand the cold – get in the kitchen!  The Hartstone Inn kitchen that is and join Chef Michael Salmon for a cooking class.  Classes are informative, entertaining, and of course, filled with delicious food and wine.  Weekend packages are $357 – $575 and include two nights lodging, breakfast each morning, afternoon cookies and tea, our Chef’s Tasting dinner menu for two and enrollment for one in the cooking class.  Enrollment into the cooking class alone is $45 per person.

Caribbean Cuisine
Saturday, January 25th & Sunday, January 26th  from 1-3pm

Chef Michael was named Caribbean Chef of the year in 1996.  Join in preparing some of his favorite dishes and creations using tropical fruits and local ingredients. We will start with a Caribbean Papaya-Kahlua Colada and follow with: Batakons and Plantain Chips, Caribbean Hot Sauces with Tropical Fruits, Scabechi (Aruban Pickled Fish), Keshi Yena with Roti Bread, and Jerk Seared Tuna with a Mango Salad.

Saturday, February 8th & Sunday, February 9th from 1-3pm

A class for Chocolate Lovers…bring your sweet tooth!  Chef Michael will share his famous soufflé recipe with a Chocolate twist. “Death by Chocolate” is a chocolate ganache tart made with Bailey’s Irish Cream, Grand Marnier, and a brownie crust.  It is heavenly.   Next, we will make a Chocolate-Almond torte with Almond Macaroons and finally a Chocolate Créme Brûleé.

Gingerbread House Decorating for Adults

Instructed by Patricia Moroz of Starlight Custom Cakes.  

Offered November 30th, 2013 from 12-3pm at the Hartstone Inn.  $55 per person or book our Cooking Class Package.  It includes two nights lodging, our five course dinner for two and enrollment for one in the class. 

You have never been to a gingerbread house decorating class like this before!  Everyone will be provided with a beautiful New England style gingerbread farmhouse to decorate. Unlike the houses that children normally decorate with candy, we will be decorating these houses using a variety of elegant lace patterns, damask and Christmas floral prints and more. Everyone will be provided with a tray full of edible sugar snowflakes, Christmas wreathes, holly leaves and berries, leaping reindeer and many more decorations to be used for creating their festive gingerbread house. Towards the end of the class, each will be covered with delicate icicles.  Every house will be attached to a base with a center hole cut out in the base. Although not essential, a small electric candle type light can be placed inside of the house, if desired.  All houses have windows that have been cut out so that the houses can be lit from the inside making them even more beautiful during the holiday season! No experience required and this will be a casual and fun class!

Note: If you are traveling by car from out of town, these houses are very strong and can easily be transported in a car.

“Crazy for Crêpes” Cooking Class November 23rd & 24th

Offered on Saturday, November 23rd & again on Sunday, November 24th, from 1-3pm

Join Chef Michael as he goes crazy with crêpe recipes, both sweet and savory. After learning how to make basic crêpe batter, Michael will teach you his technique for creating the perfect crêpe at home. The crêpes will then be turned into fabulous dishes like Wild Mushroom Crêpe with Roasted Duckling and Smoked Salmon Butterflies. Chef Michael will share some ideas with you for a crêpe dinner party and then proceed into dessert crêpes: Fresh Berry Crêpes, Banana Foster Crêpes and Chocolate Ganache Filled Crêpes.

Join Chef Michael in his Hartstone Inn kitchen for a cooking class weekend, covering a wide range of topics from regional and ethnic cuisines to seasonal and holiday offerings. Classes are informative, entertaining, and of course, filled with delicious food.  Weekend packages are $370 – $560 and include two nights lodging, breakfast each morning, afternoon cookies and tea, our five course Chef’s Tasting Menu for two and enrollment for one in the cooking class.  Additional enrollment into the cooking class is $45* per person. “From the Spring Garden” Cooking Class at the Hartstone Inn

Chef Michael SalmonChef Michael‘s last cooking class until fall is just a few weeks away!  Our “From the Spring Garden” cooking class is offered both June 1st & June 2nd from 1-3pm. 

Springtime in Maine is a pretty exciting.  The snow is gone and our gardens are beginning to produce some spring bounty.  Chef Michael will take advantage of this local produce with a menu he has created that reflects the season.

Hartstone Inn cooking classes are informative, entertaining, and of course, filled with delicious food.  Our Cooking Class Package starts at $377 and includes two nights lodging, breakfast each morning, afternoon cookies and tea, a gourmet candlelit dinner for two and enrollment for one in the cooking class.  Additional enrollment into the cooking class is $45 per person.

Tea Cup Cake Decorating Class at the Hartstone Inn

On May 18, from noon until three o’clock, Patricia Moroz of Starlight Custom Cakes will be teaching students how to create beautiful, edible sugarpaste teacups that will be used to decorate their cakes.  Each student will be provided with a fresh cake that has been iced and covered with fondant, a teacup and saucer that they will learn to decorate, and a generous selection of sugar flowers that will be used as accents on their teacups and cakes. The cakes and teacups will be decorated during class using a variety of beautiful luster dusts and edible gold. Students will learn enough about the use of sugarpaste that they will be able to go home and make a variety of decorations for cakes and baked goods. Each student will also learn how to make their own teacup and saucer to bring home with them. These can be used as samples, together with an instruction guide and a vendor supply list that will enable them to order any products that they may be interested in. This will be a fun and casual class with no experience required.   Our Cooking Class Package starts at $352 and include two nights lodging, breakfast each morning, afternoon cookies and tea, a gourmet candlelit dinner for two and enrollment for one in the cooking class.  The cost for the class alone is $55.

We have added a cooking class to our Hartstone Inn 2013 Cooking Class Schedule“Lobster, Lobster, Lobster” class will be offered on January 19th from 1-3pm.  Make it a weekend getaway and book our Cooking Class Package which includes two nights lodging, breakfast each morning, a five-course gourmet dinner for two and enrollment for one in a scheduled cooking class. Cooking classes include recipes, hands-on participation, wine to complement the cuisine and lots of food to taste.  Enrollment for the the class alone is $45.


Lobster, Lobster, Lobster Cooking Class Details

A trip to Maine should be based around eating as much lobster as one can. This class will help you achieve that goal!  Chef Michael will share his techniques for cooking and “breaking down” lobsters, and guide you through four very diverse preparations.

Recipes include:

  • Maine Lobster with a Vanilla Beurre Blanc
  • Lobster and Gruyere Soufflé with a Grilled Corn Cream
  • Maine Lobster and Asparagus Salad with a Tangerine Dressing
  • Avocado and Lobster Cakes with a Chive Sour Cream and Roasted Tomato Jus

Many of our guests not only love to cook, but to bake too.  We do not offer pastry classes here at the Hartstone Inn but Sweet Sensations Pastry Shop does and it is only 10 minutes away!  Plan an overnight or a weekend getaway with us and take a class while you are here.  Steve, one of the owners of Sweet Sensations has been featured on the Food Network television show Food Network Challenge where he made amazing cakes!

2013 Class Schedule

January 6th – Fun with Cupcakes:  Learn to make cupcakes and decorate them with buttercream flowers.

January 13th – Pate choux: Learn to make eclairs, cream puffs, mice, swans & fillings.

February 3rd – Sugar Cookies: Make and decorate your own cookies. Over 500 cutters to choose from. Each person will get to make at least 15 cookies! *Bring a rolling pin!

February 10th – Chocolate Mousse Cake:  Make and bake a chocolate cake and fill/frost it with chocolate mousse. Fun chocolate decorations will be made to decorate your cake! Just in time for valentines day!

March 3rd – Fun with Pies: Cream pie, chiffon, meringue, lattice, custard, 2 crust and different pie shell options. Along with quiche ideas. *Bring a rolling pin!

March 10th – Rolled Fondant: Learn to cover a cake with this edible clay. You’ll be shown different techniques. (All the cakes Steve created on the food network challenges were covered in fondant) *Bring a rolling pin!

April 7th – Basic Cake Decorating: Learn to put buttercream on a cake like a professional and decorate with different ideas shown in class. Additional $15.00 charge for take home pastry bags and tips.

April 14th – Pizza: Learn to make pizza dough & sauces with lots of topping ideas.

“All classes are limited to 10 people. With a minimum of 7 people. No children under 12. All classes are hands on! Classes are $40 per person. All classes are on Sundays and start at 3PM. Classes last approximately 2-3 hours. Bring your own rolling pin and apron for the appropriate classes! a $20 cash non-refundable deposit (unless class is canceled or rescheduled) Remaining balance will be collected at the beginning of the class. “
