Appleton Cheese Trail – Foodie Fun!

Appleton Creamery and ME Water Buffalo Co., two local creameries will be offering their cheeses for sale and farm visits every Saturday through the month of October (fall weather permitting).  You can pick up the Appleton Cheese Trail rack card from their booths at many Midcoast Maine farmers’ markets and local info kiosks.  On it you will find a map showing each farm along with other agricultural attractions in the Appleton area and details about open hours and such. “Dim Sum” Cooking Class – January 9th & 10th

January 9th or January 10th, 2016 – 1-3pm

Start the new year off right – learn something new and enjoy delicious cuisine!  Dim is an umbrella category for small Chinese dishes. Typical examples of this food are small dumplings, wrapped foods such as won tons and egg rolls, and other foods. In general, individual portions of dim sum are small, so that numerous dishes can be ordered and sampled by the table. Most dim sum falls under the category of a savory pastry, although these foods can be prepared in a variety of ways. Dim sum can be steamed, fried, boiled, baked, or broiled, and this wide range of options makes for a lively and varied meal.

In our cooking class, we will prepare a variety of dim sum, starting with three fillings: Thai Pork, Turkey and Shiitake and Shrimp. Then we will make three varied dipping sauces: Thai-Lime, Garlic-Chili and finally a Ginger-Sesame Dipping Sauce. Then it’s time to wrap the filling into various shapes for steamed dumplings and fried dumplings. Next we will make potsticker dough and form and cook potstickers. The final recipe will be crisp Shrimp Toast.

Classes are informative, entertaining, and of course, filled with delicious food!  Enrollment is $45 per person or make it a getaway and book our Cooking Class Package!

Join Chef Michael is his Camden kitchen for an evening of cooking and dining!  Assist in creating the evening’s four course menu which will be complimented with a wine paring. The goal is to recreate locally the fun that is enjoyed on their Foodie Adventures abroad!

Our first cooking class of the year, “Travel to Tuscany” is fast approaching!  If you can’t join Chef Michael in Italy for one of his Culinary Adventures, then come to Camden and experience some of his favorite Tuscan dishes. “Travel to Tuscany” will begin with Baked Artichokes with fresh Ricotta, Aged Pecorino and Italian Herbs.  Next will be Roasted Bell Pepper, Arugula and Grilled Eggplant Salad followed by Seafood Risotto with White Truffle Oil.  Class will finish up with dessert, Salted Caramel Budino – Italian Butterscotch Pudding.

“Open Farm Day is an annual family adventure in which farms throughout all 16 counties open their gates to offer the public an opportunity to learn about the business of agriculture.

Farms around the state participate to commit to ensuring the sustainability of agriculture. Maine’s farming industry has given back to their communities by providing a forum for education and learning in a fun atmosphere. Many farms will have demonstrations, displays, farm-raised products for sale and animals and crops to experience. Activities include barn and field tours, milking, hay rides, petting zoos, nature trails, beautiful scenery, samples for tasting and refreshments. Open Farm Day gives families the chance to visit local farms throughout the state.
