Class details:
Late January in Maine begs for comfort food…hearty, filling, and warm in the belly. We start off by making Scaccia, a street bread made in southern Sicily, that is layered with basil, tomato and grated hard cheese. Next we turn to a personal favorite of Prosciutto Baked Fresh Mozzarella with Garlic and Tomatoes, served with crisp crostini to sop up every bit of goodness. Fried Crisp Polenta with Mushrooms and Pecorino follows, and a citrusy Lemon-Hazelnut Tart, will have you looking forward to warmer weather.

Event Details:  The one-of-a-kind historic toboggan chute at the Camden Snow Bowl is 400-feet-long and rises 70-feet in elevation, allowing many toboggans to reach speeds up to 40 miles per hour as they slide out onto frozen Hosmer Pond. If there is clear ice on the pond, some sleds will go the entire way across – about a quarter mile – after exiting the chute. “A cross between an Alice in Wonderland costume ball and a family reunion, the nationals claim to be the only organized wooden toboggan races in the country. “— Franz Lidz, Sports Illustrated. Come eat, drink, and laugh! Anyone can watch or register, just get your team in before it sells out. Vendors sell delicious hot food, craft beer, and souvenirs. Class details:
Professionally, I have been involved with Sous Vide cooking for over 20 years. My first circulator cost about $1200…quite an investment compared to the modern day equipment that is available for under $200. If you enjoy cooking at home, and have not been “bitten by the Sous Vide Bug”, it is a game changer. Sous Vide cooking is just starting to take off with home cooks, and this course will introduce you to the equipment, concepts and basic techniques needed to get you started. During the two hour class we will cook everything from vegetables, potatoes, and fish to BBQ pork ribs, beef tenderloin, chicken thighs and even creme brûlée.

Class details:
The Maine coast is home to some of the best seafood anywhere! We will take advantage of that bounty in this class with Swordfish Caponata, grilled swordfish served over a medley of braised Mediterranean vegetables with a lemon-dressing. Cod Fillet will be seared and served over White Beans with Shrimp in a Chorizo Broth. Maine Lobster follows, and will be butter poached over a Fava Bean Custard. Paella is an ideal way to showcase seafood, and Chef Michael will share some of his secrets on this rather time-consuming crowd pleaser.

In this class, Chef Michael will share some of his favorite dishes from Spain: Jambon with Fava Beans and Salsa Brava (Spanish ham served over sautéed fava beans with a tomato sauce); Spanish Gazpacho with a Paprika Sour Cream; Sea Perch “Samfaina” in Terra Cotta (Samfaina is similar to a ratatoulle); and Churros with Hot Melted Dark Chocolate.

Class details:
Chef Michael leads culinary adventures near Ragusa, in southern Sicily. These recipes are a few of his favorites from that region. To start, well make Arancini Ragu, which are crisp risotto balls with a spicy Sicilian meat sauce, followed by Fennel Salad with Blood Oranges, Cured Black Olives and Arugula. Next, we’ll stuff Swordfish Rolls with Pine Nuts, Capers and Currants and finish things off with a White and Dark Chocolate Ganache with Figs and Pistachios.

We will concentrate on knife skills during this 2 hour class. Each participant should bring their own “chef knife” to the class where Chef Michael will teach the basics from knife care and maintenance to proper techniques in holding and using a knife. The recipes for this class were chosen to highlight different knife techniques, and participants will each get to “sharpen” their knife skills in this hands-on cooking class. Menu: Roasted Eggplant, Mozzarella and Tomato Timbale; Fennel and Sausage Soup; Seafood Salad with Calamari, Octopus, Mussels and Clams; Peking Duck with Scallion Pancakes.

Provence is well known for it’s vibrant and mouth-watering cuisine. Chef Michael and class start off with a regional favorite Pissaladière, a Provençal flatbread with caramelized onions, anchovies and olives, followed by an Asparagus Salad with Soft Poached Egg, Olive Tapenade and a Lemon Dressing. Next, we will delve into the technique of sausage making with Homemade Garlic-Pork Sausage with Herbes de Provence served over Ratatouille, and finish things off with a Fresh Cherry Clafoutis with Vanilla Ice Cream.

Event Details:  The North Atlantic Blues Festival is an annual two-day blues music festival featuring national blues performers and considered one of the most prestigious on the East Coast. The festival is held at the Public Landing in Rockland, Maine, overlooking the picturesque Rockland Harbor. Some of the top names in blues music have been featured at this prestigious East Coast festival. In addition to all day live entertainment, the festival has vendors selling a wide array of food, drinks and crafts.  Saturday evening Main Street is closed to traffic for the NABF Club Crawl. Attendees of legal age, wearing their wristband from the festival are allowed free admission to the many bars and restaurants featuring many of the top regional blues performers. There are also bands performing on Main Street for all ages at no charge.

Celebrate Camden’s maritime heritage and living traditions at the annual Camden Windjammer Festival. From the great age of sail when coasting schooners were launched in the harbor, through the birth of the windjammer business in the 1930s, to today’s windjammer fleet and elegant yachts, sailing ships have always defined our lovely, vibrant community.

On Friday, watch the magnificent schooners as they maneuver into the harbor, bid on dinners aboard one of the fleet, and then watch a talent show by schooner crews in Harbor Park followed by fireworks over the harbor. The fun continues all weekend with a lobster crate race, a Build-A-Boat contest, fish relay race, nautical skills, displays of maritime activities and history, Chowder Challenge, tours of the windjammers and fun for all.
