Specific dishes include: Pappardelle alla Norcina, with a hearty sauce of pork and black truffles, Spinach Agnollotti with Oregano, Chicken and Cream, Crisp Ricotta Gnocchi with tiger shrimp, eggplant and peppers, and Orecchiette Pasta with a Sicilian Pesto.
