The Maine coast is home to some of the best seafood anywhere! We will take advantage of that bounty in this class with Swordfish Caponata, grilled swordfish served over a medley of braised Mediterranean vegetables with a lemon-dressing. Cod Fillet will be seared and served over White Beans with Shrimp in a Chorizo Broth. Maine Lobster follows, and will be butter poached over a Fava Bean Custard. Paella is an ideal way to showcase seafood, and Chef Michael will share some of his secrets on this rather time-consuming crowd pleaser.
